Can virtual reality techniques be used for a lean manufacturing system? Are there any projects recently done that relate these two areas. Best.

AI'm not aware of any virtual reality simulations being applied to Lean planning and design.

But I am aware of at least one factory floor simulation model that is used to model Flow and assist in redesign of Flow through the factory floor -- Lean Manufacturing Systems Inc..

Factory Logic and Pelion Systems incorporate stochastic models of production flow (note: these are not virtual reality models) that are used to establish Heijunka (leveled) production schedules.
